The fermentation process is: fermentation temperature 8℃, pH 5.2-5.4, yeast inoculation amount 18×106-2.0×106/ml, and fermentation cycle 18 days. The pilot test results show that the fermentation degree is less than 50%, and the alcohol content is 2/3 of ordinary beer, which meets the requirements of low alcohol beer. Low alcohol beer has certain defects in flavor and needs to be improved.
