Steps

1. Wash and cut the beef into pieces, soak overnight (at least 2 hours) to allow the blood to seep out, changing the water 2 or 3 times in between. Take out and wash clean.

2. Add cold water and chopped beef into the pot and cook together, skimming off the foam on the water.

3. After boiling, add a little cooking wine and continue cooking until the foam on the surface is skimmed off.

4. Take out the beef, put it in a clean basin and wash it thoroughly with hot water.

5. Put the washed beef into the pressure cooker and add boiling water (the water should be above the beef or at the same level as the beef).

6. Add scallions, ginger, peppercorns, cinnamon, bay leaves, cooking wine, and pepper powder (add various seasonings according to personal taste).

7. Turn the pressure cooker to the meat setting and cook the beef. Do not open the lid immediately after cooking. Be sure to simmer for an hour so that the beef will be very tender. 8. Take out the cooked beef and let it cool.

9. Cut the beef shank into thin slices after it has cooled down (preferably refrigerated overnight). I cut it directly after it cooled down, and the meat was very soft, so the result was more finely sliced.

10. Take appropriate amount of sweet noodle sauce, sesame oil and mix the sauce (this is the key). Stir the sauce evenly, pour it on the sliced ​​beef, and then sprinkle with chopped green onions for decoration.
