1. Clean the pig brain

Use a toothpick to gently lift the thin film on the surface, slowly collect it until all the fascia is clean, and then keep rinsing it in water until the blood is soaked clean. That way there will be no fishy smell and the taste will be tender.

PS: If it is frozen pig brain, you need to thaw it first and then soak it in water.

2. Make seasoning

Add chopped bean paste, minced garlic, minced ginger, chopped chili pepper, minced Sichuan peppercorns, minced coriander, minced green onions, salt, chicken essence, soy sauce, cooking wine, and heat oil until cooked.

3. Roasted brains

Place onions on an aluminum foil bowl and place the processed brains on top. Pour the hot oil and seasoning evenly over the brains. Seal the bowl with tin foil and bake in the oven at 230 degrees for 25 minutes. Cut the remaining cilantro and green onions into small pieces and place them on the roasted pig brains.
